Après avoir obtenu ses premiers prix de flûte et de musique de chambre au CNSM de Paris dans les classes de Jean-Pierre Rampal et Christian Lardé, Georges Lambert est soliste à l'orchestre du Conservatoire sous la direction de Manuel Rosenthal, puis à l'Orchestre des Pays de Loire créé en 1971 par Pierre Dervaux.
Parallèlement, il mène une carrière de soliste et de chambriste et obtient en 1976 le premier prix du Concours international de Colmar.
Il se produit dès lors aux Etats-Unis, en Europe, en Asie, participe aux grands festivals internationaux (Salzbourg, Schleswig-Holstein, Pablo Casals , Folle Journée ) et donne des master classes en Europe, aux Etats-Unis, en Corée...
